Ramadan 2013 has started and so is the search for easy and quick suhoor recipes. In this hot and humid weather the last thing anyone would want to do is going to kitchen at 2 am and prepare something for suhoor. Therefore, we decided to bring a couple of recipes for suhoor for you that will take minimum cooking time while providing you all essential nutrients and of course would be finger licking good!

 DESI OMELETTE

Egg is the easiest thing to make! Running short of time? Whip up this simple desi omelette that is full of protein and other nutrients. Eat it at its own or have it with your parathas, the choice is yours!

Ingredients

Eggs – 2

Onion – 1 (small, chopped)

Tomato – 1 (small, chopped)

Green Chilies – 2 (chopped)

Coriander – 1 tbsp (chopped)

Milk – 2 tbsp

Salt – 1 tsp

Black pepper – ½ tsp (crushed)

Turmeric – Just a pinch

Oil – As required

Procedure

Take a large bowl and whisk your eggs.

Chop all veggies and add them to your eggs.

Include milk and rest of the seasonings, mix well.

Put your fry pan on high flame and add oil, pour the egg mixture on it and wait for 30 seconds.

Once one side of your omelette is done, grab a spatula and flip it.

Let it cook for 30 more seconds. Your desi omelette is ready.

 MIX VEGGIES

Another quick recipe that can easily be altered, now you need not to worry about available ingredients. Use all those vegetables that are already there in your refrigerator, just chop them all and make this desi version of mix vegetables, perfect to have with your crispy parathas for suhoor.

Ingredients 

Peas – ½ cup

Cauliflower – ½ cup

Potato – 1 medium (diced)

Capsicum – 1 medium

Onion – 1 medium (roughly chopped)

Tomato – 1 medium (roughly chopped)

Lemon – 1

Oil – 3 tbsp

Salt – to taste

Red chili powder – 1 tsp

Green chilies – 2

Fresh Coriander – 1 tsp

Procedure

Heat oil in a wok and add onion, fry till onion becomes soft and changes its colour to brown.

Add potatoes and cook for 5-8 minutes, add little water if required.

Once potatoes become a bit soft, add rest of the vegetables except green chilies and coriander.

Season your veggies with salt and red chili powder, cover the lid and cook for few minutes until your veggies are done.

Squeeze one lemon on your mix vegetables, chop some chilies and coriander and garnish your vegetables with them.

DAAL FRY

Lentils are a known source of proteins and this is exactly what your body needs before fasting. Try this traditional punjabi daal fry recipe that is rich in flavours and proteins, at the same time it is very easy to make, would be a perfect accompaniment of your suhoor parathas or simple chapati.

Ingredients

Channe ki daal (gram lentil) – 1 cup

Ginger & Garlic paste – 1 tbsp

Onion – 1 medium (finely chopped)

Tomato – 1 medium (finely chopped)

Salt – to taste

Red chili powder – 1 tsp

Turmeric – ½ tsp

Cumin – ½ tsp

Dried coriander – ½ tsp

Garam masalah – ½ tsp

Butter or oil – 4 tbsp

Procedure

Boil gram lentil for ten minutes with three cups of water and a pinch of salt.

Add butter in a wok and let it melt on medium heat, add cumin and dried coriander to it and cook for few seconds.

Add ginger garlic paste, chopped onion and tomatoes to the butter and saute.

Once the masalah gets separate from the butter, add boiled daal into it.

Season your daal with salt, chili powder, turmeric and garam masalah and cover the lid.

Let it simmer for three to four minutes. Turn of the heat. Your daal is ready to be served.

Spice up your suhoor table with this delicious mouthwatering qeema recipe. We suggest using chicken mince, since it takes literally ten minutes to get all done but you can always go for mutton or beef, however alter your cooking timing accordingly.

Ingredients

Chicken Mince – 500g

Onion – 1 small

Oil – as required

Garlic paste – ½ tsp

Ginger paste – ½ tsp

Papaya paste – ½ tsp

Salt – to taste

Red chili powder – 1 tsp

Cumin powder – 1 tsp

Yogurt – ½ cup

Procedure

Add garlic paste, ginger paste, salt, red chili powder and papaya paste to your chicken mince, mix well and leave for 5 minutes.

Heat oil in a wok. Roughly chop your onion, add it to the oil and cook till it turns golden brown.

Add marinated chicken mince to wok, cover the lid and let it cook for 10 minutes on medium heat.

After ten minutes turn the heat to low, add yogurt and cumin powder to your mince and cook it for few more minutes.

Your quick qeema is ready, serve it with parathas.

Forgot to set your alarm and now you have only 15 minutes in hand to make something for suhoor? Go for this incredibly simple 5 minutes paratha rolls. All it takes is some left over cooked meal and you will experience a whole new story of flavours in no time!

Ingredients

Left over cooked mince/meat/veggies/kebabs – as required

Onion – 1 small (sliced)

Tomato – 1 small (sliced)

Cucumber – few slices

BBQ sauce – 1 tbsp

White Vinegar – 2 tbsp

Salt – just a pinch

Crushed red chilies – just a pinch

Frozen Parathas – as required

Procedure

Chop your fresh veggies and throw them in a bowl. Add vinegar, salt and crushed chilies to them, mix well.

Toast your paratha and spread BBQ sauce on it.

Place your left over cooked chicken/mince/veggies at the center of the paratha and add fresh vegetable salad on top of it.
